UV mapping isn't the same as your unfolding.
The Unfolding technique allows the model to be put back together with paper.
Your UV coordinates are your texture image mapped to the polygons of the 3D Model.

The unfolding app will transfer the UV coordinate to the correct sections of your cut outs.

UV mapping is a strange beast, but AC3D makes it pretty painless.

You could imagine UV maps in this way, a magazine is a 3D model,
and each image and section of text in the magazine is a different pair of triangles
or 'frames' with a UV coordinate applied.

I think thats a good analogy.

Another good analogy might be a person is a 3D model and
"Where do you want your tattoo?" is what the texture coordinate editor is asking you. :-)
