One trick is to temporarily move the object or add an extra vertex, adjust the center, then return the object to it's original position.
Otherwise, I just posted a collection of plug-ins I wrote for adjusting pivots:

This set lets you:
- Set the object centre to the selected vertex
- Enter a pivot location manually
- Rotate around the pivot numerically (you can drag rotate around the pivot in AC3D already, but the numeric rotate always goes around the centroid. This rotates numerically around the pivot instead.)
- Zero the pivot. This is a convenience function, useful for setting up your root node.
There's one more I didn't upload; it lets you transfer a pivot from one object to another. I didn't upload it because it's a bit touchy, and I'm not sure if it's really useful to anyone other than me.
But, if anyone out there thinks they want it, let me know, and I'll see what I can do to clean it up and get it out there.
