For myself, anyway, I tend to save a version once I get satisfied with everything at a milestone stage, such as:

basic fuse half done. planename_A.ac

wing (and any engine on it) done. planename_B.ac

tail and horiz stab done. planename_C.ac

flight surfaces cut and capped. Planename_D.ac

Things like this. My goal is not so much to document my process for posterity, but to have a place to return to if I have a real disaster during modeling and then, it's best to return to the last milestone version, get a good night's sleep and a clear head, and take up from where I began screwing up before.

I usually end up with 4 or 5 interim models, and then, when I'm done with the "full half", I mirror it, weld the centerline vertices, and add any centerline parts, and other odds and ends. That usually becomes my last version.
