Surface -> Cut Away Object does exactly this.
The only caveat here is the surface doesn't get its vertices normals calculated using adjacent surfaces any more. On flat objects like in Thor's example, this is not an issue. However, on curved areas, like the one in the attached image (guess which surface has been cut away
), it has a negative impact.
I'd love to see per-surface texturing in AC3D, but until then, we'll just have to use workarounds...
