Default making baloney slices.

so I have a ship, and I want to greatly reduce the number of polygons, what I have done in the past is make the ship like slices of baloney, starting at the bottom extruding up, changing the shape a little, then copying that top of the "box" and repeating as I work my way up the object (see screen cap of the crusie ship)

Now I have a ship that I imported from sketchup, and would like to be able to just get the baloney slices of the top and bottom of a section of the ship and the corresponding sides (see screen caps of the container ship) can anybody explain how to do this? or did I even explain that in any form of a comprehensable fashion??
