Hi Thierry,
my answer would be "yes you can use polylines as extruding paths".
But I wonder why you need polylines and not simple lines for that ?
AFAIK polylines are closed lines, do you really need your path to begin and end at the same point ?
If your path has to be not aligned on an axis and in "3D", make a temporary one, and then move some vertices here and there in the most suitable view to give it depth and whatever ...
This is the way I usually proceed myself.
