@jleslie

Right click on the colored number in the bottom left of the screen.
You can edit the material property.
Or Append a new material with the properties you want and then apply that material to your mesh.

Yes I know that.

But what if I want to undo that? I assigned an object a material, but now I want to undo that and apply a texture to that object instead. I can't figure out how to dis-associate a material from an object.

Every surface must have a material. A texture is per object and is optional.

To find out what material a surface has, click it in surface mode. It will show in the status bar at the bottom.
