2 Questions!

How can you UN-triangulate a surface?, like a Cilinder, if i wanted to make a hole in it but i cant since both "caps" have lots of surfaces like a pizza and when i "make hole" it makes a hole in each pizza slice! lol

So, bottom line, How can i UNtriangulate a surface?

And another thing: How come when im in the 3D view window and i try to rotate the camera its centre or its axis isnt on (0,0,0)?
