You'll have to split them into 2 objects manually after the mirror.

You can make the wings in your example separate objects by going into Surface mode and selecting all the surfaces on one side of the axis/object, then performing a "Surface -> Cut away object" (I believe that's the command name, don't have the UI up at the moment). This should do what you need...
